How To Make Sliders with Chipotle Mayonnaise?

  1. Make the chipotle mayonnaise: Blend mayonnaise, chipotle peppers, adobo sauce, and lime juice in a food processor until smooth. Season with salt and pepper.
  2. Preheat the grill: Set it to medium-high heat and let it warm up.
  3. Form the slider patties: Shape the ground beef into small patties (about 2 to 3 ounces each) and season with salt and pepper.
  4. Grill the sliders: Cook the patties for 4-5 minutes on one side until they form a crust, then flip and cook for another 4 minutes.
  5. Melt the cheese: Place a slice of cheese on each patty at the last minute of cooking. Close the grill lid to let it melt.
  6. Assemble the sliders: Place the patties on mini burger buns, spread chipotle mayo on top, and add any other toppings you like.

Recipe Tips:

  • Use high-quality ground beef (80/20): This ratio of meat to fat gives the sliders the best juicy texture. Leaner meat can make them dry.
  • Don’t overwork the meat: Gently shape the patties without pressing too hard. Overhandling makes the burgers tough and dense.
  • Let the patties cook without moving them: When grilling, leave the patties alone for at least 4 minutes before flipping. This helps form a nice crust and keeps the juices inside.
  • Toast the buns lightly: A quick toast on the grill makes the buns crisp on the outside but soft inside. This prevents them from getting soggy when you add the toppings.
  • Taste and adjust the chipotle mayo: Blend the mayo and taste before adding more chipotle. If it’s too spicy, add more mayonnaise or a squeeze of lime to balance the flavor.

How To Store & Reheat Leftovers?

  • Refrigerate: Let the sliders cool before storing. Keep the patties in an airtight container and store the buns separately. They will stay good in the fridge for 3 days.
  • Freeze: Wrap each cooked patty in plastic and put them in a freezer bag. They will last 3 months in the freezer.
  • Reheat: Heat a skillet over medium heat. Add the patties and cook for 2-3 minutes per side until heated through. Cover with a lid to help retain moisture.
